Hog Carcass Breakdown

All figures  will vary depending on live weight of the hog. We shoot for 230-250lbs.live weight.

Ham-  , 26lbs of cured ham,3 lbs cutlets,,6lbs. trimmings

Side ( belly) -19lbs cured bacons, 6lbs. spareribs, 9lbs. trimmings

Loins- 4lbs. backribs,11lbs boneless loins,8lbs. country style ribs, 6lbs. sirloin roast, 2lbs tenderloin ,  2lbs. trimmings

Picnic -13lbs. boneless picnic meat.

Boston Butt- 5lbs. blade steak,8lbs. blade roast , 2lbs. trimmings

Miscellanious-16lbs. jowl ,feet,tail,neck bones,etc.

Total- 146lbs. Hanging Weight

This is the amount of meat you will pay to have processed.  The  processing cost, skinning, cutting , curing , packaging, etc, are costs you pay to the butcher and will vary.  There  are several quality meat lockers in our area , and we will be happy to work with you on choosing the best one for you. Or if you have a butcher in mind we can work with you on delivery. We charge a minimum 25.00 delivery fee to the processer.

Pick Your Own !

You are more than welcome to come to our farm, look the farm and animals over and “Pick Your Own Pig” This way you will know how where , and by whom your pig was raised ! All from a a  farmer you can talk to ,  and pigs you can see over the fence !

$ 50.oo non- refundable deposit on all P.Y.O. Pigs .

C. S. A. Pork. Pay As They Grow.      

This program allows you to make several smaller payments as your pig grows leaving you with the funds to pay the processor when your hog is ready to butcher. Here is how it works.

$50.oo  deposit , $ 50.oo per month to $200.oo. The balance will be paid to Eskibillyacres at the time of processing based on the actual hanging weight of the hog.
